Cheesecake Stuffed Strawberries

Are you trying to eat better, but your sweet tooth keeps calling to you? These cheesecake stuffed strawberries are great to have on hand. You can easily double or triple the recipe to have some on hand for the whole week.

Serves 2

  • 12 strawberries

  • 2.1 oz. (60g) mascarpone cheese

  • 1 tbsp. light cream cheese

  • 1 tbsp, honey

  • 1 tsp. vanilla extract

  • 1 Graham Cracker. crushed

Remove the tops of the strawberries and with a shape knife cut out the center of the strawberries.

Mix together the mascarpone, cream cheese, honey and vanilla extract.

Fill the strawberries with the mixture and sprinkle with graham cracker crumbs. Store the strawberries in the refrigerator until ready to serve.
