Shrimp and Veggie Stir-Fry

Shrimp and Veggie Stir-Fry

Serves 4

  • 2 tbsp extra virgin olive oil

  • 10 oz frozen broccoli

  • 1 large red pepper, sliced

  • 2 cups mushrooms, sliced

  • ½ pound shrimp, fresh or defrosted, tails removed

Sauce:

  • 1 tsp honey

  • 2 tbsp low-sodium soy sauce

  • 2 cloves garlic, minced

  • 2 dashes cayenne pepper, optional

Heat wok or large skillet with oil. Add frozen broccoli and fry until heated through (4-5 minutes).

While the broccoli cooks, make the sauce in a  small bowl.

After the broccoli is heated through, add the red pepper and mushrooms and fry for 1-2 minutes. Add the shrimp and fry until they're cooked and turn pink. 

Add the sauce to skillet. Toss and cook until heated through.

Tip: Serve on a bed of brown rice or quinoa.
