Soybean Hummus
Serves 8
2 1/3 cups chickpeas, drained
2 cups soy beans
½ cup mint
3 tbsp. tahini
1 garlic clove
3 tbsp. lemon juice
2 tbsp. olive oil
water, as needed
Put the chickpeas, beans, mint, tahini and garlic in a high-speed blender and puree until smooth. Add in the lemon juice and olive oil, season to taste with salt and pepper, and blend again. Add water as necessary to achieve desired texture. Serve as a dip with vegetables.
