Steak with Mustard Shallot Sauce

6 oz of your favorite cut of lean steak (1-inch thick) - top sirloin, tri tip, etc.
Kosher salt and black pepper
1 tsp olive oil
1 Tbsp Dijon mustard
1 Tbsp red wine vinegar
1 shallot, chopped
Season steak with a pinch of salt and pepper to taste
Heat a large skillet with the olive oil. Cook steak over medium-high heat, 3-5 mins per side for medium-rare. Let rest 5 minutes then slice against the grain.
In a small bowl, whisk together the mustard, vinegar, and shallots.
Top the steak with mustard sauce and serve with a side of vegetables.
