Vegan Pear and Cinnamon Oatmeal
Serves 2
1 cup oatmeal
2 cups water
1/8 tsp. salt
1 large pear, peeled, cored and roughly chopped
1 cup almond milk, unsweetened
2 tbsp. maple syrup
1 tsp. cinnamon
Place the oats, water and salt in a saucepan and bring to a boil. Add in the chopped pears and half of the almond milk, then stir well.
When the oatmeal returns to a boil, lower the heat, cover with a lid, and let it simmer, stirring frequently, for about 15 minutes. Add milk to the rest of the milk as required.
Once the oatmeal is smooth and creamy, turn off the heat. Then stir in the maple syrup and cinnamon.
Divide between two bowls and sprinkle with some more cinnamon and walnuts (optional). Serve immediately.
