Mediterranean Guacamole

Serves 8

  • 2 ripe avocados, halved, pit removed

  • 1 lemon, juiced

  • 1 tbsp. chopped sun-dried tomatoes

  • 4 cherry tomatoes, diced

  • ½ small red onion, diced

  • 1 tsp. dried herbs de province

  • 2 tbsp. chopped parsley

  • 8 black olives, chopped

  • 1 tbsp. feta crumbled (optional)

Place the avocado and lemon juice into a large bowl and mash it up with a fork. Add remaining ingredients (apart from the feta) and mix well. Season with salt and pepper. Crumble the feta on just before serving.
